I have both the YS 61 ST1 and YS 61 ST2 and am trying to figure out which is which. How can I tell which is which?

The ST2 has a small screw in the center of the carb barrel to adjust the idle mixture, the ST1 doesn't. There are some porting differences also, but the only external difference is the idle mixture screw.
