Has anyone used the new M1 30 Carbon with a video camera?..such as a Sony Pd100a? It's advertised as a still camera mount. I'm just wondering if it could be used for video.

Yea no problem shooting video, the only hold up is that you do not have the pan feature only the tilt. Hence the description for still photos. I have flown a video cam on mine, other than the lack of a pan control it was great.

...I wonder if down the road it could be modified for a pan servo?

Yea (I believe that it could add a pan servo and gear, and a small threaded attachmnet bracket fro tne gyro and you have one of the regular systems, only slightly smaller.
