how much cyclic should i give my 500 with 13+/1 pitch for mild 3d?

If I'm not mistaken you should have a larger range. Say +13 and -13. You need to have some negative pitch there to bring her down and fly inverted for that 3 d flight you speak of.

I am not doing any 3D yet but I am running +14 degrees of pitch and -14 degrees of pitch on my 500.

I am currently using between 6 & 8 degrees cyclic depending on idle up and it is very responsive at that, I cant do hard 3d or much more than flips rolls and a bit of inverted. But at this set up it seeems very good, and doesnt bind

Most heli's typically run 7º of cyclic pitch. You can figure that you have a maximum pitch of 17º-18º of pitch either side of neutral with combined cyclic and collective. So, take your 13º away from 18º and you are left with about 5º of usable pitch left for cyclic.
The above is a generality. some helicopters can't take as much as that and start to bind. Some can take more...
I would start with +/-12º of collective and 5º of cyclic. See how it feels and change it if you feel it's not right.

You can get plenty on the 500, just max it out till you get binding then back it off abit, if you are just learning just put about 25% Expo in.
Eat, sleep, 3D, crash, repair, repeat...

With +-12 degrees and 8 degrees cyclic the servo arm on the elevator binds with the torque tube housing on full negative and full up elevator. Is this normal?

binding is never normal!
If you are binding then back off on the cyclic or collective. +/-12º is not insane for collective. Try backing off your cyclic first.
Some good pilots with good skills set their birds up so that they are binding but they also don't use full collective and cyclic at the same time thus preventing binding with their fingers.
