| It really depends on the type of part you want to make ...
If you want to cut a frame (something flat !) out of carbon, G10 or aluminium, most shops can either take a DWG or DXF, you just need to check the versions and double check the dimensions with them.
If it's something that will be turned (something round !) and is not complex, most places will work with a simple sketch or 2D drawing.
The fun starts when it's neither of those ... then there are no straight answers, the complexity of the part, tolerances, types of operations needed, machines involved, need to be look at with the shop. They will tell you what they need to get it done.
From your question, it seems the shop (assuming you have talked with them, hence my introduction !) is not equiped to produce CNC paths from 3D models/solids. Typically they will require a 3 view/2D drawing with all the dimensioning done. Again, this can be done in DWG or DXF or sometime even ploted out on paper ...
