Boyd, I looked at that already but there using either brushed main motor and brushed tail motor or Brushless main motor and Brushless tail motor like you set your Blade up, but no one is using a brushless Main motor with a brushed tail motor

The principle is the same... use a brushed ESC for brushed motors (like the CC Pixie 7p for the tail) and a brushless ESC for the main motor (like the CC Phoenix-10 for the main).

Connecting up all the other bits goes the same way as in that diagram..

One thing that might have confused you when comparing those two diagrams is the presence/absence of the "Mixer" between the throttle and tail controls at the ESC/Gyro. That mixer is a "revo mixer" that is for use with non-heading hold gyros. It adds in a little more tail speed when you add in a little more throttle... to counteract the tendency of the heli to torque against the rotation of the main blades. A heading-hold gyro doesn't need one.. it tries to keep the same heading until you command a new heading.

The brushed/brushless thing is just a choice of ESC.

The "4" in your 4-in-1 are:
1. Receiver
2. Mixer
3. Gyro (non-heading hold)
4. Brushed electronic speed controller.. two actually

These are the functions you're replacing when you "go separates"... but the mixer is present because the gyro is not a HH.

No I do understand all about the 4 in 1
I guess my real question is can I use a Pixie 7 amp ESC that is rated for 8 cells, on my tail and plug it into a 3 cell lipo?

Ah, yes you can.. just disable the BEC (which you'll want to do on one of your ESCs anyway). According to the Pixie 7p specs here it supports up to 18 cells (21.6v) with the BEC disabled.
